A bleed build will be based on arcane, so take that in consideration when making your character. Don’t pick a class just for its starting gear, also. There are some blood-related incantations and sorceries, but I’d really only see them being used in pvp. They seem pretty damn lackluster for pve.

Slow, questionable against enemies that don't flinch. It's quite strong even without the Art if you're heavy in Faith. It regularly out damaged every other Greatsword I had with a STR/DEX/FAI of 30/30/50. Others came close and if you're going heavier into STR or DEX other greatswords will probably beat it damage-wise. I ran around with 3 or 4 different greatswords for different fights. The Dragon Halberd has the best physical attack power among the other halberds, making it an apt choice. Brass Shield or any sheild is good if you want to parry.Bloody Helice is great for an arcane/dex build. Bloodhound finesse does 44 poise damage if you hit both times, dynasts finesse does a whooping 55 if you hit with all of it. Also bloody helice can poke behind shields...
